Easy Halloween Chocolate Skeleton / Mummy Cookies
These cookies are so fun! Give yourself time to chill the dough, and then have fun cutting out your skeletons and mummies!
COOKIE DOUGH:
1 cup butter, softened
1 cup sugar
1/2 cup packed brown sugar
1 egg
1 teaspoon vanilla
2 3/4 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking soda
ICING:
1 1/2 cups confectioners' sugar
2 tablespoons milk
DIRECTIONS
In a mixing bowl, cream butter and sugars. Beat in egg and vanilla.
In another medium bowl, combine flour, cocoa and baking soda. Gradually add to creamed mixture. Cover and refrigerate for 1 hour or until easy to handle.
On a lightly floured surface, roll dough to 1/8 inch thickness. Cut with a gingerbread boy cookie cutter. Place on a greased baking sheets and bake at 375F for 7-8 minutes or until set (I recommend setting a timer, it's tricky to see if the dark dough is burning). Cool for 1 minute before removing from pans to wire racks to cool completely.
For icing, in a small bowl combine the confectioners' sugar and milk until smooth. Fill a plastic resealable bag or piping bag with icing and cut a small hole in tip. Pipe skeleton bones or mummy bandages on cookies and let cool until icing is set. Add eyes to the mummies with small candies. Store in a sealed container until serving. Yields about 24 cookies, depending on your cookie cutter size.
