Recipe: Tasty Espresso Smoothie (non-dairy)
I've had a lot of requests for my easy coffee smoothie recipe after posting a few times on my Instagram stories (which sadly disappear after 24 hours). I'm typically a tea drinker and love a steamy mug of anything hot in the fall and winter, but his recipe has been on repeat now that we've turned the corner into summer. It solves a lot of problems around getting out of the house quickly with something in my belly and a little hit of caffeine.
INGREDIENTS:
1 cup nut milk
1/2 frozen banana
1 shot espresso (or 1/2 cup strong drip coffee)
1 tbs nut butter
1 scoop protein powder
handful of ice
Optional additions: 1/4 cup quick oats, 1 tsp maca powder, 1 tbs collagen or other supplements
DIRECTIONS:
Put all ingredients in the blender, with the ice last.
Blend until creamy and enjoy!
I use unsweetened almond milk and almond butter, both from Costco, but you can't go wrong here. Use your favourite nut butter and nut milk. My mama-friend Kiley suggested the addition of quick oats to plump up the smoothie and feel fuller; I tried it, and it's terrific. (this recipe is delicious with or without, but add a splash more milk if you're using oats). I also like to add a scoop of pumpkin protein powder and a tablespoon of maca powder.
